Instant Pot Dinner Rolls

We love dinner rolls in our family, but we usually buy prepackaged rolls because it is easier, faster and more convenient with a large family .  I decided to make homemade rolls and  I was able to use my instant pot to help me with the process.  This recipe takes about 1 hour from start to finish including the proofing and rising.  If you have an hour worth of time these are really good rolls. 


2 cups of milk
1/2 cup of butter (1 stick)  "cold" butter
1/2 cup of water 
1 tsp of salt
3/4 of sugar
3 eggs
1  TBSP of oil 
2 TBSP of dry active yeast
7 cups of flour


Start in a sauce pan with 2 cups of milk over medium high heat. Once it starts to boil you want to remove it from the heat. Next you want to add your whole stick of butter which is 1/2 cup, and the trick is to use cold butter. Mix it around until it is fully melted and wait until it cools off and becomes room temperature. Once it becomes room temperature you are going to add your 1/2 cup of water, 1/2 tsp of sugar (this will feed the yeast), and add your 2 TBSP of dry active yeast. Mix everything together to make sure the yeast is combined well. Now within a few minutes your yeast will start to bubble.  The bubbles are a good thing you want to watch for this, it is a sign that your dough will rise well. Otherwise if this doesn't happen your yeast might be old and expired, and unfortunately you will have to repeat the process above with fresh yeast from the store if you don't get bubbles after 10 minutes. 

If you have a bread mixer this would be a great time to use it. If you don't own a bread mixer it's ok. There is no need to go out and buy one if you don't currently own one because you can just use a bowl and a spoon and then use your hands.  IF you made it through the first steps you are ready to start adding the other ingredients. Next you will add your liquid from the sauce pan to either your bread mixer or a bowl, then you will add 1/4 cup of sugar to the mixture 1 tsp of salt and 3 eggs.  

Now turn on your mixer or use a whisk until everything is combined . Go ahead and add 3 cups of flour to start and mix it well with a spoon continue mixing in the rest of the flour 1 cup at a time ending with a total of 7 cups. You probably have already seen that your dough is becoming sticky. You can continue to use a spoon if you wish or your hands that will be fine too. After you have added all of the flour into the dough it will be a little sticky still,  and this is fine it is how you want it to be it makes great fluffy rolls this way.

Next you want to head over to your Instant Pot and add 1 tablespoon of oil of your choice I used olive oil. Spread the oil around so the bottom is coated. Then you can add your dough to the bottom of the Instant Pot. You want to move the dough around to coat all around the dough. It may not be all the way coated with oil and this is ok. Now you are ready to turn on the Instant Pot. You will need a lid, plate or pan to put on the top of the Instant Pot, I used a pan.  Now push the yogurt button and go down to 30 minutes which by the way is the lowest time that it will go. You will need to set a timer as this only needs to go for 20 minutes and your Instant Pot will not end at 20 minutes.  

Once your time is up you will need to push the cancel button take off the lid, pan or plate you used, and kneed your dough and punch it down just enough to move it around as it has risen quite a bit during the first 20 minutes. Now put your lid, pan or plate back on top and press the yogurt button again to 30 minutes and set a timer (remember the Instant Pot only goes to 30 minutes) somewhere else again for only 10 minutes this time. 

While you are waiting for your 10 minutes now would be a good time to preheat your oven to 450 degrees and spread some flour out where you will be rolling out your dough. Once the 10 minutes is up press cancel remove the lid, pan or plate and remove the dough it will still be sticky.  Lay your dough on the flour and then flour your hands and on top of the dough. Use a rolling pin and roll it out, if you don't have one don't be afraid to use your hands to press it down. Your dough doesn't have to be perfectly even all the way around just pretty close. 

Now that your dough is rolled out you will want to cut your dough you can use a knife or pizza cutter and you will want to cut your dough into sections horizontally and vertically so you get squares. Have a sprayed cookie sheet or pan ready to go, then take your square dough and fold in the corners and pinch the bottom so it makes a roll. 

Now your rolls are ready to go into your oven at 450 degrees for 10-12 minutes, mine took 10 minutes.  Once the rolls are done they will be nice and crispy on the outside and super soft on the inside just the way we like our dinner rolls.  

I was in a rush so I didn't quite get my second pan of rolls pinched good enough and I forgot a photo of my first batch. 

I made raspberry jam in my Instant Pot just like my Instant Pot Strawberry Jam and we had that on our rolls. They are really delicious!
