Instant Pot Kickin' Chicken Pot Pie

Chicken pot pie is a comforting meal that my older kids loved eating when they were little. They enjoy the traditional way I make it with crust that I put on top and bottom, but last night I decided to try something different. I poured the creamy chicken and vegetables over biscuits and I added a little twist and added cheddar cheese and bacon to the recipe for something different. 

Ingredients -Serves 12-16 cut this recipe in half for 6-8 servings

2 cups of chicken broth
3 lbs of raw chicken breasts, cut up into bite size pieces
2 cups of peeled carrots
1 cup of diced celery
4 cups of peeled, cubed potatoes 
1 tsp of salt
1 tsp of pepper
1 tsp of poultry seasoning 
2 cups of frozen peas
2 cups of half and half
6 TBSP of flour
3 cups of grated cheddar cheese
12 crispy slices of bacon, chopped 
Canned biscuits or homemade or toast 


1. Add the chicken, carrots, celery, potatoes, salt, pepper, and poultry seasoning to the Instant Pot. It is not necessary to stir the ingredients in the Instant Pot at this time. 

2. Lock the lid into place and be sure the vent valve is closed. Set the pressure cooking time for 4 minutes on HIGH pressure. It will take time for the pressure cooker to build pressure mine took about 12 minutes. When the Instant Pot beeps and the time is up let the Instant Pot slow release (sit in the pot and let it vent on its own) for 5-10 minutes. Then click cancel button move the valve vent to vent the little bit of pressure left in the pot and carefully remove the lid away from your face to prevent burns.
3.  Now push the Instant Pot Saute function and add the frozen peas.
4. In a glass measuring cup add the half and half or whole milk (I used half and half) and add some of the liquid from the Instant Pot to temper it. Then you want to slowly add in each TBSP of flour at a time and whisk it well so that you don't have lumps. Once you have all of your flour mixed up add it to the Instant Pot on saute this takes about 1 1/2-2 minutes to thicken.
5. Add the shredded cheese and chopped bacon
I  served the creamy chicken and vegetable sauce over biscuits, but you can use toast as well.

Everyone enjoyed dinner last night and because it was such an easy dinner I was able to make Instant Pot Strawberry Jam afterward to have this morning
