Easy Instant Pot Strawberry Jam (3 Ingredients No Pectin)

I made Instant Pot Strawberry Jam last night after dinner so that it would be ready for today and it was super easy to make from start to finish it was a snap, and this strawberry jam recipe is cost effective. It only has 3 ingredients in it and it does not require any pectin which is something I would never have on hand to make any jam. I am looking forward to using other fruit to make our next Instant Pot jam.

1 lb (4 cups) of strawberries
1/2 cups of granulated sugar
2 TBSP of lemon juice

1. Rinse the strawberries and remove the leaves, then slice the strawberries in half.

2. Add the strawberries to the Instant Pot, then add the sugar and lemon juice and mix them well.
3. Lock the lid and let the strawberries sit for 30 minutes while the natural juices release from the strawberries.
4. Now you can open the lid and stir the strawberries again, then lock the lid in place and be sure the vent valve is closed. Set the pressure cooking time to 1 minute on HIGH pressure.
5. Once the cooking time completes allow the Instant Pot to naturally release the pressure for 15 minutes. Then press cancel and vent the valve and let the pressure out. Then carefully remove the lid away from your face to prevent getting burned.
6. Open the lid and use a potato masher or hand blender if you want your jam to be smooth. I over blended mine so it isn't very chunky, but it is ok because it still tastes delicious.
7. Now press the saute button and let the mixture come to a boil for 5 minutes and frequently stirring your strawberry jam. Letting it boil will help to thicken it and it will also continue to thicken while it cools.

You can use this strawberry jam on biscuits, toast, ice cream, yogurt, waffles, pancakes or even layer it in cheesecake or use it as a cheesecake topping. Enjoy this recipe! We sure did. 😀
